The farmers maintain the traditional spirit of this craft by meticulously selecting their products and adapting production techniques to the conditions of the land. Potatoes, peppers from Herbón, in the north of the province of Pontevedra, onions from O Salnés, millo corvo from the O Morrazo peninsula, or the Grelos de Galicia from the Protected Geographical Indication, whose cultivation extends to the four cardinal points of the province, are some of the excellent products of this highly valued destination in its gastronomy.

Turnip greens, the stalks and leaves of the turnip, a typical Galician vegetable, are one of the basic ingredients of traditional Galician recipes such as Galician broth, stew or lacón con grelos, and a distinguishing element of the local cuisine.
