The importance of the river environment in As Rías Baixas is not only based on the beauty of its landscapes. Following its course means entering places of great biological, historical, ethnological and gastronomic richness. The many rivers that bathe the province of Pontevedra offer freshwater species such as elvers, trout, salmon and lamprey.
The lamprey swims up the waters of the river Miño from the ocean to spawn and die. The town of Arbo has earned its place as the historical capital of this delicacy, and the "pesqueiras", the traditional method of lamprey fishing, are a unique feature of the landscape.
