Denominations of Origin: Wines, mussels, cheeses and peppers.
Flavour, meticulous work by producers to obtain the best raw material and proven quality. These are three great attributes of the gastronomy of As Rías Baixas, which find their maximum exponent in the products with designation of origin: wines, mussels, Tetilla and Arzúa-Ulloa cheeses and Herbón peppers. These are:
In the Rías Baixas Protected Designation of Origin (PDO), white and red varieties traditionally coexist, but it is the white varieties that have the greatest weight and, among them, it is fundamentally the Albariño variety that gives a specific character to this wine-growing area.
Geographical area
- Val do Salnés: Cambados, Meaño, Sanxenxo, Ribadumia, Meis, Vilanova de Arousa, Portas, Caldas de Reis, Vilagarcía de Arousa, Barro, O Grove and A Illa de Arousa.
- Condado do Tea: Salvaterra de Miño, As Neves, Arbo, Crecente, Salceda de Caselas, Ponteareas, A Cañiza (parish of Valeixe), Tui (parishes of Guillarei, Paramos, Baldráns and Caldelas de Tui) and Mos (parish of Louredo).
- O Rosal: O Rosal, Tomiño and A Guarda, Tui (parishes of Pexegueiro, Areas, Malvás, Ribadelouro, Rebordáns, Pazos de Reis, Randufe and Tui) and Gondomar (Mañufe and Vilaza).
- Soutomaior: municipality of Soutomaior.
- Ribeira do Ulla: in the province of Pontevedra, A Estrada, Silleda and Vila de Cruces.
The P.D.O. Mexillón de Galicia protects mussels that really come from the Galician estuaries and certifies that they are cultivated according to the traditional and natural way of these estuaries, based on a respectful relationship with the environment.
Geographical area
Its cultivation area is the inland maritime area of the Galician estuaries in the provinces of A Coruña and Pontevedra, which are authorised for mussel cultivation in rafts; it is made up of the following areas: Ría de Ares-Sada, Ría de Muros-Noia, Ría de Arousa, Ría de Pontevedra and Ría de Vigo.
The peppers covered by the PDO 'Pemento de Herbón' are the fruit of the species Capsicum annuun, L, from local ecotypes of the 'Padrón' variety.
Geographical area
The production area of the product covered by the Protected Designation of Origin covers the following municipalities:
- In the province of Pontevedra: Pontecesures and Valga.
- In the province of A Coruña: Padrón, Dodro and Rois.
Tetilla cheese is characterised by a mild smell and taste and a creamy texture, and is distinguished by its conical shape. The product is obtained from the milk of Friesian, Brown Alpine and Galician Blonde cows and their crossbreeds.
Geographical area
Both the milk production area and the production area of 'Queso de Tetilla' cover the whole of the Autonomous Community of Galicia.
In the province of Pontevedra: Agolada, Lalín, Silleda, A Estrada, Vilagarcía de Arousa and Cuntis.
Arzúa-Ulloa cheese has a slightly salty flavour, with a hint of acidity. As it matures it gains buttery aromas and hints of vanilla, cream and nuts. It is produced from the milk of Friesian, Brown Alpine, Galician Blonde and crossbred cows. There are 'farmhouse' and 'cured' varieties.
Geographical area
The area in which the milk is produced and the cheeses are made under the Protected Designation of Origin Arzúa-Ulloa comprises the geographical area of the following municipalities:
- Province of Pontevedra: Agolada, Dozón, Lalín, Rodeiro, Silleda, Vila de Cruces and A Estrada. In addition to these, there are 16 municipalities in the province of A Coruña and 9 in the province of Lugo.
